Stupid realism versus reality question

Howdy all. Another question from the newbie....

While flying, even in VATSIM, let's be frank. It's rather common for many of us to "leave the flight deck" for a bit for any number of reasons.
Generally it's to take care of nature's calling or to get a drink, answer the phone, electrify the dog, etc. Clearly in real life we either wouldn't
leave the deck or, if we really needed to, we'd have a co-pilot there do cover the situation in our absence.

Now that I have FS Passengers with the default Emergencies of 5% set, I've been afraid to leave the deck for any reason. I'd be demoralized to leave
to grab a drink and return to find my plane has experienced some disaster.

How do emergencies work and is there a way to tell the program to, for example, pause on such a case as an option? The worst case then would be if I
were on VATSIM and my plane suddenly froze in space until I returned, but that's a trade-off I can decide on then.

generally emergencies don't happen that often in cruise. If you are in cruise, you can feel free to move around. But if you are in a climb or a
descent you might experience bird strikes, gear won't lock etc.

I've never encountered an fatal emergency while in cruise yet *knock on wood*. I've had them a few times on descent and once or twice on climb. You
really have to be vigilant on approach! Yesterday I was flying into YYZ in a nasty thunderstorm (had my pax fear at 30%!); i can't imagine what I
would have done if there had been a failure on that approach... "Your passengers are passing out from fear. Those still alert are throwing up in the
aisles."

I was flying on Vatsim once. Flying from KJFK to KMIA on the level-D 767 flying into KJAX airspace. Next thing I know on my gauges is engine 2
overheating. I decide to let it idle down and keep the pressure on engine 1. Next thing I know engine fire... I shut off the fuel valve I called
KJAX CTR due to having troubles keeping airspeed from dropping staying at 270. I start desending couldnt make it to KJAX knowing it was like 135nm
away. I try to land at the closest airport atc sends me too. On final about 100 feet away from the runway I couldnt control my airspeed and
everytime I increased power on engine 1 my plane would be going a different direction ofcourse that makes sense. : ) I hit the ground 100 feet away
from touchdown atleast I made a soft landing if I can remember 300-400 fpm.... : ) opps not bad for 1 engine ehh?

I just started a flight and was at 5000ft and I left for 1 hour and when I returned the airplane was still flying normally at 32000ft with no
problems , but then I checked on the passengers and the said they didn't like my dive of death and the excess of 2.02 G . I still wonder
what it was , because my engines where good hydr. press was good . etc.

I noticed that sometimes FS autopilot gets crazy and begins to dive or to bounce around the set altitude.. sometimes it gets me really angry...

Only enroute issues I've encountered is from a window that couldn't take the pressure anymore and the noises that came with it about made me wet
myself. Once I clicked though I throttled back and pointed the nose down a lot lower than normally gets the "Dive of Death" msg from the pax and got
them back to earth safely-ISH. Departing Seattle a couple weeks ago in my trusty 732 #2 got the munchies and injested a bird but didn't die on me
right away. Made it to Juneau on the one good engine, but that situation doesn't really count as an enroute failure.
