Is it possible to start a new career and somehow use the hours flown from the FS flightlog that way I can start with a much nicer aircraft
than that Cessna and at a higher level?

No... you must advance manually in FSP.

In that case what file/s do I need to backup in case I need to reinstall FS9 that way I don't have to start all over again?

you can howewer start a new company and simply transfert your pilot into this new company.

About important file to save to continue with your company/pilot

1-print your unlock code or keep it handy (needed for upgrade)
2-save the content of the folder "database"

if you have any problem just install FsP again, register with your unlock code
and copy your saved "database" folder back.
